Valentine's Day mini-chocolate cakes

These scrumptious little cakes are so easy to make – simply beat the ingredients together. Decorate them with mini meringues for a sophisticated touch.

Ingredients (serves 8 people)

  • Cakes
    500 ml (2 c) cake flour
    80 ml (¹⁄3 c) cocoa powder
    250 ml (1 c) ground almonds
    10 ml (2 t) baking powder
    375 ml (1½ c) brown sugar
    200 g butter, melted
    3 eggs
    250 ml (1 c) butter
  • Ganache
    150 g dark chocolate
    125 ml (½ c) cream or plain yoghurt
  • To Complete
    24-30 mini meringues
    Icing sugar (optional)

  1. Preheat the oven to 180 °C. Grease 8 ramekins and dust with flour. Line a baking sheet with baking paper, grease and dust with flour.

  2. In a large mixing bowl beat together the ingredients until well blended. Turn the mixture into the ramekins, fill them three-quarters of the way. Bake for 45 minutes or until a skewer inserted in the middle comes out clean. Turn out onto a wire rack to cool completely. Reduce the oven temperature to 100 °C.

  3. Melt the chocolate and stir in the cream or yoghurt. Cool until the mixture has a spreadable consistency.

  4. To complete, put the cakes on a serving platter and cover each with ganache. Arrange the meringues on top and set aside until the ganache has set. Dust with icing sugar (if using).

Hmmm looks yummy. So sad we didnt have oven. That's why I opt for no bake cake this days. Theyre also good too and easy to make. For this Vday, I make chocolate biscuit cake (no bake too) and homemade dark choco banana icecream. Sweetness for valentines day.
