Timesaving microwave meals – Breakfast Bowl Quiche
Breakfast is the most important meal of the day but when you are busy you skip it; a bowl quiche is a really quick breakfast recipe that you need to try.
Ingredients (serves 4 people)
- 1 large egg
- 4 cherry tomatoes
- 1 Tbsp (15ml) melted, unsalted butter
- 1/8 cup (25g) torn bread
- 1 ½ Tbsp (24ml) whole milk or heavy cream
- 1 Tbsp (4g) grated cheese (Cheddar or Monterey Jack)
- 1 Tbsp (1g) chopped fresh scallions
- Pinch of salt and pepper
Slice cherry tomatoes in half.
Tear fresh bread into small pieces and pack into a measuring cup (keep to the side).
Crack the egg into a bowl or mug with high sides to let it rise.
Add milk and butter. Add a dash of salt and pepper.
Whisk with a fork until the egg is fully blended.
Toss in the cheese and layer in the bread and tomatoes.
Top with scallions. Do not mix.
Cook on high setting for one minute. Cook for longer in 15-second increments until egg is completely cooked and quiche is slightly puffed.
