Healthy Detox Recipe: Avocado and Quinoa Salad

You overindulged during the holidays and now you’re starting the New Year not feeling your best. You want to clean out your system but you have no idea where to start. Try this avocado and quinoa salad: high in protein and gluten-free, quinoa looks like a grain, but is actually a seed. Combine with nutrient-rich avocado, this salad makes a delicious lunch or side dish for dinner.

Ingredients (serves 4 people)

  • 1 cup quinoa, uncooked
  • 1-3/4 cups water
  • 1 tablespoon olive oil
  • ½ lemon, zested and juiced
  • ½ avocado cut into chunks
  • Sea salt
  • Toasted slivered almonds (optional)
  • Fresh parsley, chopped (optional)

  1. Rinse quinoa very well or else the grain will be bitter.

  2. Combine water and quinoa in a medium saucepan. Bring to boil, cover, reduce heat, and simmer for about 20 minutes or until water is absorbed. Remove from heat and fluff with a fork. Stir in olive oil, lemon juice and zest.

  3. Fold in avocado. Sprinkle with sea salt. Add some toasted almonds for extra crunch or a bit of fresh parsley if desired.

  4. Serve chilled or at room temperature.
